Our Lemon Poppy Seed Cake mix is a nice blend of tart lemon powder and poppy seeds. It is a great quick bread to make at a moment's notice for unexpected company and makes a great breakfast/brunch treat. However, when you want something just a little bit fancier, I would like to suggest you try this cake in a Bundt Pan. Top with a fresh lemon glaze and you have a very cute and fancy Bundt Cake to serve to some very lucky friends or family.

Ingredients

6-Cup Bundt Pan - Spray generously with baking spray….make sure to get all the nooks and crannies.

1 Box The Invisible Chef Lemon Poppy Seed Coffee & Tea Cake Mix

4 Tbsp. unsalted butter, room temperature

2 Large Eggs
-
2/3 cup buttermilk
-
1 cup powdered sugar - for glaze
-
2 Tbsp. freshly squeezed lemon juice - for glaze

Directions
Preheat Oven to 350 degrees F
In a bowl of a stand mixer fitted with the flat beater, beat the butter until fluffy. Add a small amount (about 1/4 cup) of the cake mix and mix on med-low speed until blended. Scrape down the sides of the bowl as needed.
Add 1 egg, half of the buttermilk and 1/2 of the cake mix and mix on med-low until blended. Scrape down the sides of the bowl as needed.
Add the second egg, the remainder of the cake mix, and the buttermilk. Mix on med-high for about 1-2 minutes. Remove bowl from mixer and pour batter into prepared pan.
Bake for 35-40 minutes. Remove from oven and let cool for about 10-15 minutes before removing from pan.
Let cool completely before topping with glaze.
Prepare the Lemon Glaze
Put the powdered sugar into a small bowl and add the lemon juice. Mix well until completely blended. Pour glaze on top of cooled cake, letting the glaze run down the sides. Let glaze set before slicing and serving. Enjoy!
Recipe Note
Why Freshly Squeezed Lemons? Fresh lemons have a bright and tangy taste. Bottled lemon juice frequently has additives and preservatives. But, if that is what you have on hand....use it!
