This delicious and easy Mocha Latte Cake with a streusel topping and drizzled with chocolate is just what you need on a chilly, rainy day.. As usual, The Invisible Chef takes it up a notch with a crunchy topping and rich chocolate drizzle.

Prepare the Topping:
In a medium bowl, combine the flour, brown sugar, espresso powder, salt & butter using a pastry blender or fork until the mixture sticks together when pressed. Chill, while making the cake.
Prepare the Cake:
Preheat oven to 350 degrees. Follow the directions on the back of the box to make the cake. Put cake batter into a prepared 9 x 5 Loaf Pan.
Sprinkle the streusel mixture evenly on top of the cake. Bake for about 45-50 minutes. Remove from oven and let cool in pan for about 10 minutes. Remove from pan to a wire rack and let cool complete before drizzling with chocolate.
Make the Drizzle: Place chocolate chips in a medium size stainless steel bowl. Place the bowl over a saucepan (just so it fits, and no water can splash into the bowl) and place over low-medium heat (keep the temperature low to avoid scorching). Stir constantly until the chocolate melts. Make sure to stir as chocolate keeps its shape when it is melted. Turn off heat as soon the chocolate is melted.
Using a spoon, drizzle the chocolate back and forth over the top of the cake. Slice and enjoy!
