Our mixes are absolutely delicious baked just as directed, but around here we love getting creative - making lemonade out of lemons.....or cookies out of a cake mix! So, grab a box of our Red Velvet Coffee & Tea Cake mix and let's turn it into irresistible Red Velvet Crinkle Cookies. Just add a couple of eggs and butter - everything else you need is already in the box.

2 Large Eggs

8 Tbsp Melted Unsalted Butter

Baking sheet covered with parchment paper
Directions
Preheat oven to 375 degrees
Put the eggs and melted butter into a medium sized bowl. Whisk well.
Add the cake mix and stir until well blended. The batter will be thick.
Add about ¼ - ½ cup of the frosting mix (included) to another bowl
Using a 1-oz cookie scoop (or a small spoon), scoop out some of the batter and drop into frosting mix and roll around until the cookie dough is generously covered. Repeat with all the dough.
Put cookies on the prepared baking sheet, spacing about 2-3 inches apart.
Bake for about 9-10 minutes. The bottoms will be lightly browned and inside soft and tender.
Remove to a cooling rack and letting cool completely.
Make about 20 delicious cookies!
Recipe Note
Make the cookies even more delicious.....make them into Sandwich Cookies: Add 8oz cold cream cheese, 4 Tbsp unsalted cold butter and the remainder of the frosting mix to the bowl of a stand mixer fitted with the flat blade (or use a hand mixer). Mix until smooth....add 1 tsp milk if needed to achieve the correct consistency....you want the filling to be a little on the thicker side. To assemble, spread about 1 tablespoon of the filling on the underside of the cookie and then top with another cookie - making a sandwich. Delish!
