½ cup unsalted melted butter, cooled slightly

2 eggs

2 Tbsp warm water

8 ounces mascarpone or cream cheese, room temperature

1 cup cold heavy cream

¼ cup confectioners’ sugar
-
1 tsp pure vanilla extract

1 tbsp instant espresso or instant coffee
-
1 Tbsp unsweetened cocoa powder
Directions
Prepare an 8” x 8” baking pan by lining the pan with parchment paper, leaving a 2-inch overhang on two sides for easy removal of the brownies (to make cutting the brownies easy!) Bake as directed and let cool brownies completely.
Make the Topping: In a medium bowl, using a hand mixer on medium speed, beat the mascarpone (or cream cheese), confectioners’ sugar, vanilla and instant espresso until well combined.
Slowly add the heavy cream and beat on high speed until slightly stiff peaks form.
Spread the topping evenly over the cooled brownies. Place the cocoa powder in a fine mesh strainer and dust evenly over the top of the mascarpone cheese topping.
Using the parchment paper overhang, carefully lift the brownie out of the pan.
Cut into 16 pieces, wiping the knife clean in-between cuts for neatly sliced brownies.
