Coffee Makes Everything Better, Mocha Chocolate Icing

I start every morning with a cup of coffee, then I can tackle the day. So, this morning when I was having my morning coffee and planning my day (though, I have to admit, sometimes the day plans me), I started to think about all the foods I love that are flavored with coffee.

Just to name a delicious few…..coffee ice cream (yum), BBQ sauce (takes your BBQ to the next level), chili (makes a robust chili), chocolate (brings out the chocolate flavor), cocktails (one of my favorites), cakes (perfect!) and so many other foods you can add coffee to that just makes everything taste better.

Speaking of cakes, The Invisible Chef produces a Mocha Latte Coffee & Tea Cake Mix with coffee and chocolate. Simple to make...just add eggs, milk & oil….bake, serve, enjoy, repeat!

To take this cake up a delicious notch, for this week’s Think Outside the Box recipe, I thought I would make it really simple and make a Mocha Chocolate Glaze Icing to top the Mocha Latte Cake.

You just need three ingredients (one of which is a couple of tablespoons of coffee – just save a few tablespoons from your morning coffee), powdered sugar & unsweetened cocoa powder. Mix all together and pour on the cake. The icing will firm up quickly and you will have a rich coffee flavored icing on top of a delightful Mocha Latte Coffee & Tea Cake….now that's....simple & delicious!

And you have a sweet treat for that afternoon cup of coffee….

Coffee Makes Everything Better, Mocha Chocolate Icing Recipe

Mocha Chocolate Icing

You Will Need:

Prepare the mix according to the directions on the back of the box. Cool cake completely on a wire rack. When ready to pour the glaze over the cake, put a piece of parchment or aluminum foil under the wire rack to catch the glaze drippings.

Glaze

  • 1 cup powdered sugar
  • 2 Tbsp. unsweetened cocoa powder
  • 2-3 Tbsp. brewed coffee, cooled

Using a rubber spatula (or spoon), mix together the sugar, cocoa powder & coffee until smooth and shiny.

Immediately, pour the glaze over the cake, spreading the glaze evenly over the top of the cake. The glaze will firm up after a few minutes. Slice & enjoy!
