Lemon Blueberry Pancake & Waffle Mix

We are not pancake people but we love waffles. I purchased this Lemon Blueberry pancake & waffle mix a few months ago and had it on our menu for this Easter weekend (today!). The waffles were so fragrant as I made them in the waffle maker, and their crispy-on-the-outside , and tender and light on the inside texture was just amazing. My husband remarked several times about how tasty these waffles turned out. Just the right amount if lemon, and although there didn’t appear to be a lot of dried blueberries in the bag if mix, the amount of dried blueberries in the baked waffles was actually perfect. Served them with some blueberry syrup that really made breakfast this Easter weekend even more special! Sooooo, I just ordered two more boxes! We are fans of both this Lemon-Blueberry mix and the regular Buttermilk Pancakes & waffle mix.

Hands down my FAVORITE pancake mix!!! The amount of lemon is perfect - noticeable, but not over powering. I added a few dried blueberries, but the ones in the mix are great - the soften with the wet ingredients and from the heat of frying. Just delicious.

We have tried many mixes, but by far The Invisible Chef is the best around. All the different mixes they offer taste great!

Your lemon blueberry pancake/waffle mix is the best! I'm not an avid pancake person but after my daughter-in-law served these delicious pancakes I had to find this product! I ordered 6 boxes and plan to share with family and friends this holiday season.
