This special cake is soft and light with a zingy citrus zest – a pure delight! Each bite a moment of bliss and sunshine bright! Serve in the morning….the aromas will waft through your house delighting your weekend house guests.

Preheat Oven to 350 degrees F
In a medium bowl, whisk the eggs, milk and butter until blended together.
Add the contents of the cake packet and blend together with a spatula until mixed together.
Pour half of the cake batter in the prepared pan and spread evenly. Top with the vanilla pudding, spreading evenly. Top with the remaining batter and spread evenly.
Bake for about 45 minutes or until the cake is golden and springy in the center.
Remove from the oven and let cool for about 15 minutes then remove from baking pan. Let cool a bit more, dust with powdered sugar, cut and serve.
Pour yourself a cup of coffee or tea and start your day with a slice of this dreamy creamy Citrus Pear Cake.
Recipe Note
Optional: Chop some fresh pears (peel the skin off) and add to the dry mix before adding the milk mixture. Fresh fruit adds a lot of flavor and moisture to the cake......it's worth it!
