In medium bowl, combine first 4 ingredients; place half the batter in
another medium bowl.
Stir red food coloring into one bowl of batter
until it reaches
desired shade of red. Stir blue food coloring into other batter until it
reaches the desired shade of blue.
Roll red dough into 1½-inch balls.
Bake 10-12 minutes. Repeat with blue dough; bake 10-12 minutes.
Cool
completely. Spread the bottom of each red cookie with whipped
cream cheese frosting; press a second blue cookie on top of filling to
create a sandwich.
