Pizza ... Savory or Sweet?

Do you love pizza, brownies, coconut and chocolate?   If you answered yes, and how could you not?  Then, stick around, I have a really delicious Chocolate Coconut Brownie Pizza drizzled with a rich chocolate sauce, just for you!  Wait….what? 

Who said pizza must be bread topped with sauce and cheese?  In The Invisible Chef’s world….we see pizza as sweet or savory.  We do love all kinds of pizza, in fact, The Invisible Chef does have a savory pizza kit, but today, I was more in the mood for a sweet rather than savory pizza.  Stay with me here…..so, I put my thinking cap on and looked around my sample room and wondered how could I make a sweet pizza?   Then I saw a box of our brownie mix and a light bulb went off in my head….how about using our brownie mix as “the crust” and top with a rich, chewy coconut mixture garnished with almonds and then the creme de la creme….drizzled with a rich chocolate sauce!

This is the perfect dessert for a summer BBQ (summer will be here soon, don’t worry!) or maybe a birthday party….who doesn’t love a pizza party?  You can start with a savory pizza and then end the celebration with this delicious, elegant dessert pizza.

Okay!  Let’s go….this is easy.  Start with one of The Invisible Chef’s brownie mixes and gather together a few other ingredients and let’s get started on a really fun Think Outside the Box recipe!

Chocolate-Almond Coconut Brownie Pizza

 

You will Need:

Brownie Crust:

1 Box The Invisible Chef Mocha Chocolate Chip Brownie Mix

1 egg + 1 egg yolk (save egg white for coconut topping)

8 Tbsp (1 stick) unsalted butter

 Coconut Topping:

1 package (14-oz) sweetened shredded coconut

1 can (14-oz) sweetened condensed milk

2 large egg whites

 Garnish:

½ cup sliced almonds

¼ cup good quality chocolate, chopped (or chocolate chips)

1 teaspoon canola oil

(Note:  You need a total of 3 eggs (2 egg whites for the coconut topping & 1 whole egg & 1 egg yolk for the brownie mix)

 

Instructions:  Preheat Oven to 375 degrees

Separate two of the eggs, placing two egg whites in a medium bowl.  Save one of the egg yolks for the brownie (save the other egg yolk for another use).  Here is a simple guide to separating eggs:

 Separating Eggs with the Shell

  1. Crack the egg on a flat surface.
  2. Over a bowl, separate the shell at the widest point to create two halves. You will want to angle the egg upward and lift off the top half.
  3. Pass the egg yolk back and forth between the two halves, allowing the egg white to drip down into the bowl. 
  4. Repeat until you are left with just the yolk in the shell.
  5. Deposit the yolk in a separate bowl.

In the bowl with the egg whites, add the coconut and condensed milk and mix until blended.  Set aside.

Prepare the brownie mix according to package directions (except use 1 whole egg and 1 egg yolk).  Spread onto a greased 12-inch pizza pan.

Bake at 375 degrees for 15 minutes.  Remove from oven carefully and spread the coconut mixture (mixing once again to blend) over the crust, leaving ½-inch border.  Sprinkle with the almonds.  Bake another 20 minutes longer or until the topping is lightly golden brown.  Cool completely on a wire rack.

When ready to serve, melt chocolate and oil; stir until smooth.  (Adding oil to the chocolate will keep its creamy texture and can be maintained for a longer time. The addition of oil to the melted chocolate prevents it from getting hard and keeps the chocolate soft.) Drizzle the chocolate over the pizza.  Get fancy and drizzle chocolate on a plate, then place a slice of the pizza on top….drizzle a little more chocolate again on top of the pizza just like a pastry chef!  Oooooo…..so pretty!
